Vital Kitchen offers healthy, delicious food, and nutrition options without compromises. The consumption of our food contributes to loosing weight and to the normalization of blood glucose. We offer a wide range of traditional food, but we have significantly changed the recipes and cooking technology. Our food contains no added sugar, instead we use sugar substitute made of birch.

The food range of Vital Kitchen has at least 30-50% less absorbable carbohydrate compared to the traditional menu (some types of carbohydrates can't change into sugar in the human body, they simply pass through. These are the so called non-absorbable carbohydrates.)

In the following, we introduce the main ingredients used in cooking that help us to keep carbohydrate content at a low level in our products:

1. The use of xylitol (birch sugar) instead of granulated sugar.

Vital Kitchen doesn't use granulated sugar, during cooking we use bich sugar to sweeten the food.

What is birch sugar?

Birch sugar is a white, sweet, crystalline carbohydrate, a kind of natural sugar. Its taste and appearance is almost fully identical to that of the traditional granulated sugar, but the physiological effects to human body are just the opposite. Consuming birch sugar itself doesn't lead necessarily to gaining weight, it has a beneficial effect to the teeth, it alkalinizes our body, doesn't need insulin utilization, accelerates the digestive process and helps the selection. It's safe to consume for adults, children, diabetics, pregnant women, as well for people seeking to lose weight or those on candida diet.

The birch is a natural and safe sweetener without the side effects of sugar and artificial substances, with the appearance and taste of sugar, without any aftertaste.

The xylitol sugar contains 40 percent less calories and 75 percent less carbohydrates compared to sugar. The xylitol keeps blood glucose at a consistently low level. Due to the extremely low glycemic index of 7, it will help to maintain adequate blood sugar levels. The low GI level of xylitol helps maintaining normal blood sugar levels, as well by problems of overeating and obesity. Because xylitol is slowly absorbed and converted in the human body, it strengthens the feeling of satiety and reduces the risk of overeating. Furthermore, because it contains up to 40% less calories compared to sugar, the xylitol helps reducing calorie intake, and therefore it also has a beneficial effect on weight loss.

Excessive sugar consumption causes more and more health problems today. Finally, there is an ideal solution for the preservation of our health and for the satisfaction of desire for sweets. More than 1,500 scientific research tests on the subject have concluded, that the more xilitol we eat, the more succesfully we can eliminate the sugar addiction in our life.

Xylitol is an ideal sweetener for diabetics, since Glycemic Index (GI) is much lower than that of sugar (sucrose).

The glycemic index is determined according to the level of blood glucose increased by carbohydrates after eating. (on a scale from 0 to 100 ). Foods with relatively high-GI index are those that are digested and absorbed quickly by the body, causig major blood sugar fluctuations of the body. Due to the slow absortion and digestability foods with a low GI index can cause the gradual increase of blood glucose and insulin, with a testified health benefit. The slower the degradation of the molecule, the lower is the index value. The lower the index, the higher is the chance of keeping the blood sugar stable. The index above 70 is considered to be high and below 55 is low. The table on the left indicates the different glycemic index of different sweeteners: It is obvious, that xylitol's GI value of 7 keeps blood sugar levels low and therefore significantly reduces the body's insulin requirement.

2. Dough, wheat flour

For Vital Kitchen's products we use only low-carb dough. The pasta and flour products (eg. noodles) feature a low glycemic index, causing satiety, have a high content of fiber and protein, helping the control of the body weight during slimming cures, but they are also in compliance with a diabetic diet.

3. Saturated fat

It is well known today, that excessive fat consumption is dangerous and can lead to not only obesity, but also increases the risk of development of cardiovascular diseases. According to the basic principles of healthy eating it is important, that the consumption of unsaturated fatty acids should dominate in our nutrition instead of saturated fats. Our dishes are prepared by adding minimal fat.
